Organisations need to enforce "Role-Based Access Control" to ensure that each person has access to the resources they need to do their job - no more and no less. This helps ensure that sensitive data is protected from prying eyes, and limits the possibility that it will be exported to private or external storage. The methods vary from simple account permissions like we see on our own computers (like "Administrator privileges") to very sophisticated IAM and DLP (Identity and Access Management, Data Loss Prevention) applications for enterprise systems.
